Jesse,

A few things to keep in mind here, firstly anything encrypted with today's
strong encryption will be able to be forcibly decrypted (cracked) with
tomorrow's computers quite quickly.

Remember encryption is only a way of making it hard for people to access
information, not impossible.

So you are completely correct, the best form of security is physical
security, encryption should only be used for transitory items that will not
be relevant in the future.
