Be careful: Since PDF can use JPEG to save embedded images, reversing the
process can result in significant image degradation.

Yes, they can be OCR'ed later, if you have a full version of Acrobat.
And also they can be saved as TIFF's using the "Save" or "Save As" function
and then using TIFF as the file type.
