The exact same way we have been proving for the 40 years that the copy
in the file (or on microfilm, or in tape) is trustworthy.  Documented
processes, practices and testimony.  Producing a paper copy of an email
is no different than producing a paper copy of a word document, a
printout from a business application or a copy of a printed report.

If you read the Rules of Evidence, you will see that (paraphrased here)
a copy, created by the same matrix ... is the original.
