I know Susan would like suggestions offline, but here's one just to
test the waters...

The world famous Billy Goat Tavern is just across the Chicago River
from the Hyatt. (You know, "Cheezborger, Cheezborger, Cheezborger, No
Pepsi... Coke" and all that.) They are both a greasy spoon and a tavern
and they have a 3am liquor license.

I have never been in there (I've been to other locations) -- and it is
a fairly famous watering hole. There are numerous locations, including
one at Navy Pier.
