There are no built in auditing features that I am aware of in Access.
Through a form, you can place a date/time stamp using the expression
"Now()" when the record updates, then build a query that will poll the
date/time stamp field with whatever criteria you specify (between DATE
and DATE, >DATE, etc).

You use the example of an upcoming audit. The audit date (or a date when
the record was added to the table) must be in the record. The query can
pull those records based on a date criteria.

Open fields can be found using the "Is Null" criteria.

We are looking to track any changes to the database for auditing
purposes.

Qt 2, More or les you answer with the second part of your reply.
Polling for open fields within a record, or a reminder for an upcoming
audit or something like that.

Regarding question 1, what kind of auditing are you referring to?

As for question 2, are you asking if Access can close itself when
logging off of Outlook? For reminders you can create a macro named
"autoexec" that runs when the database is opened. The macro itself can
open queries that can poll the data looking for the conditions that
require a reminder.
