Jesse: Something that is frequently found in your neck of the woods (which I know because it also happens to be my neck of the woods) and also involves pork is a classic posole - soup featuring cubes of pork, hominy, pinto beans and enough chiles to burn off your nose hair. If fixed correctly, the world's most delicious food. And if you are still capable of speech and have produced no tears after taking a bite, it isn't fixed correctly :-)
