There are number of variables that come into play
1-Memory -which can you add more too if you need to?
2-Processor-which can give you the best  performance?
3-Power -do you want a built in power supply or not, either one though you will want a UPS. This may be the one advantage to the laptop. 
4-Speed-I don't think the best laptop will match the speed of the desktop
5-Laptops seen to run hotter(but that’s just a general observation)
6-You may be able to run dual HD's on the desktop as a failsafe.

With that said I don’t think I would trust running any server on a laptop unless it was a last resort.
