Yes Visio is capable of producing project plans and timelines, but not to
the depth that MS Project does. I would recommend MSProject over Visio
because you can assign resources, show dependencies and much more. I would
use Visio to map out your work processes that would be used during the
project

I would pick up copies of the following two books (note there are editions
that cover the 2003 versions also)
