You're right of course - that was part of the crux of email in that it did provide a written record (general term, not RIM term). Not to say that it wasn't similarly explained away - "I miswrote", "I was upset", "I was drunk/tired/etc." but written words have a power that lasts.
That said, I'm not sure the impermanence of the spoken word is so true in the age of Twitter - if I say it, and you Tweet/blog/email what I said, I think the old adage applies: "A lie (or an inadvertent disclosure) will go round the world while truth is pulling its boots on." By the time I try to dig my way out, it’s enough out there that the damage is done either way.
But yeah, "don't be stupid" is media- and format-neutral. :)
