Carol,
I would say that assignment would not count as "professional experience."  But it offers educational experience and is a great public service!  Ultimately, it is ICRM's call based on submitted paperwork.  Could your students work during non-classroom hours and not for an assignment in an official records management intern position with the non-profit institution?  That could count towards needed experience.
