At least, set up set of one original, one as working "copy", all related correspondence explained why changes have been made and l approvals for it.
 
If you sure that you have more than you want to keep,  you can think about getting money appraisal for the rest - you mentioned year 1910 - it is not simple paper - check local archives, or museums - may be they would like to have them for their collection, simply don't put them for recycling right away.
 
Of course, the best set should go to your archives, second set, may be two - to Facilities and Property Maintenance, and also in two different location, for better safety.
May be you will decide , or at lest suggest, to preserve the records and to create image of them - microfilming, imaging, whatever, for daily activity.

He's been keeping those, as well as drawings of the process.  His reasoning was 
that sometimes the final building wasn't really built "as built" and he needed to 
backtrack through the drawings to figure something out, like a pipe angled a 
certain way.  

Would you keep more than 1-2 copies of the "as built" and electrical/plumbing 
drawings?
