Bradlee, although not a law firm, we used the "big bucket" approach to managing email at my last company and I thought it worked quite well. Email could be left in the Inbox for up to 120 days, then they were automatically deleted. Same for Deleted, Sent, etc. Users were to move email into the appropriate big bucket (i.e. Managed Folder) based on their retention requirements before they were auto-deleted. They also had to go through their VP to restore emails that were deleted because they hadn't been moved.... And that kept them on their toes.
