You might want to check out Cornell University Library's: 

Moving Theory Into Practice: Digital Imaging Tutorial.

There's an on-line edition that includes scanning standards from a variety
of institutions. Perhaps it's a wee bit outdated, but it will lead you to
the right sources for information.
