We use Microsoft's Communicator software for these kinds of chats, but after much discussion, decided that they're non-records for our company.  The system is set up so that users can't save, forward, or print them, although if there's ever an issue, IT can step in and monitor/save these messages behind the scenes.  We've updated our eCommunications policy to address this kind of communication, and have educated our personnel accordingly.
