I may be from the old school, but I would never recommend retaining the level of metadata above.  I would recommend retaining only that invoices from X year were destroyed.

I believe that retaining metadata on specific items is dangerous.  With today's search tools, it is too easy to find copies of the invoices that were supposedly destroyed.  I believe it is much better to find a dozen invoices that were inadvertently missed from an annual disposal than to find a dozen invoices that were specifically certified as being destroyed.

With regards to legal input on the subject, I believe that Don Skupsky addressed the issue in an article several years ago.
