Our email standard, which spells out retention, is available at:
http://www.odu.edu/about/policiesandprocedures/computing/standards/06/02.
We created managed folders in Exchange.  I developed a handout which
gives users examples of what records should be saved in the various
managed folders.

As Larry states your organization needs to consider risks when
establishing an email retention policy.  We did and ultimately came up
with the periods in the standard.
