Hi Anna, 

At one end look through PeterK's RAIN stories - there are tons of stories
right now involving email and what happens when it's not managed properly.
There is also a lot of guidance available from NARA
(http://archives.gov/records-mgmt/), the UK
(http://www.nationalarchives.gov.uk/documents/managing_emails.pdf), the
Sedona Conference (http://is.gd/U2J), and many others. 

At the other end AIIM has just released its Email Management Certificate
Program - full disclosure: I developed it. It includes guidelines and
checklists for how to determine what to save, the importance of saving some
messages when they rise to the level of records but not saving everything,
etc. Let me know if you want more information.
