From an NC public records view, I agree with Gary -- document the destruction at the records series level, rather than the file/folder level. Also, that you do not have to document the destruction of non-records, convenience copies, etc. I would only differ by saying that if the electronic record is the declared (official) record for retention purposes (and thus any paper version is a copy), then I would document the deletion of the electronic records in the same way.
