As a Las Vegas local, I can think of a number of things that make the
Hofbrau Haus an excellent choice and a poor choice.

On the positive side:
- It is fun. 
- They have a house band that plays music and drinking songs.
- It can accommodate a large group in Beer Garden
- It is across the street from the Hard Rock Hotel and Casino
- they have lots of beer
- it is easy to get to. Just drive up  Paradise Road.

On the problematic side
- it is not within walking distance of the convention center or the
hilton.  So you will need a cab or you can carpool

here is a link to the schedule of events and it appears that nothing
else
will be taking place on Sunday evening
