NARA has a training course titled, "Records Management for Everyone".  It can be taken on-line or you can order the CD.  It is geared towards Federal employees, but it would be a good starting point so you won't have to start from scratch.  The basic principles would still apply to any records program but you can tailor it for your audience.  Good luck!
