Brad,
You can generate a list of files and a few metadata fields using simple DOS commands. Opening a command prompt and navigating to the folder you wish to generate from and typing: dir /s /q > hello.txt will generate a list of all docs in that folder and its subfolders (/s) and the owner of each file (/q) in a new file named hello.txt. The dir command also outputs the create date/time and file size.
As far as a software product to do this, there are none that I know of designed simply to do this although there are many products which do a whole lot more which can also do what you're looking for.
