You actually have some great resources available at your finger tips -
AHIMA has published articles on this very topic (
http://www.ahima.org/searchresults?c=all&q=records%20retention.)  Some of
these are specific to Healthcare but can also be applied to other sectors.

One of the first tasks is to inventory the records your organization
maintains.  Different approaches some of which are discussed in a couple of
the articles.  The next is to research applicable laws and regulations that
apply the state you are incorporated in - I am guessing Illinois.  These
typically apply to financial, legal and some administrative records.  Where
you will find limited retention requirements is on the operations side; I
worked for the Project Management Institute and found this to be true.  For
these records you will have to make retention judgements based on business
needs.

Of course there are other steps involved but these are two of the most
important.
