Dear Anne:
For somebody who looks for a document that "explains how to organize, save and archive electronic records in a university environment", Moreq2 is a bit too complex (I am saying this even if I contributed to writing it). I would suggest that, before you look at Moreq2, you start in a simple way using the InterPARES Pamphlets.

Note that all InterPARES material can be printed, copied, distributed, and manipulated as you wish as it is not covered by copyright.
Also, you might want to look at the education modules for digital preservation that InterPARES produced for the ICA. You can find them here: http://www.ica-sae.org/. They are called Digital Records Pathways: Topics in Digital Preservation. On the same page you can find a video explaining how to use the modules.
