Doing a retention schedule is good for understanding the class work, but is not employment at a professional level in the field.  They would have to work for one year at the RM professional level for the organization to qualify.  I would think that they would need to be making decisions and getting approvals for the retention schedule content from the organization's legal and management levels.

Wow! This is really helpful. 

OK, what if one of their assignments is to create a usable retention
schedule for a small, not for profit? In class we review everyone's
inventory, taxonomy, metadata, and regulatory guideline matrix together. The
idea is that not only have they created a real retention schedule for a real
organization (one that would never be able to afford it), but they get to
see the development of at least a dozen others.
