"With the use of hosted services, though I notice some new questions being
asked of the RM team; such as, they do back-ups differently, or we keep
tapes archived for X amount of time, but the vendor only keeps for Y, so we
have the records(data inputs and records), but not the whole process(step
by step, who did what/when/how) that created the record like we used to
have."

The most important thing to think about is IF you have your existing
practices well documented and they meet your business needs, which of these
will potential service providers be able to meet one-for-one, and which
ones will they do differently? Then, evaluate what the differences are and
see if/what impact these changes would have on your associated practices.

For example:
Do they put you out of compliance, or at any business risks?
Do they expose your organizations or a clients data to any risks?
Does YOUR service provider SOLELY control your data or is it at any time
ported over to a third party that you don't have an SLA with?
Does your SLA prevent against these practices under any/all circumstances?
With respect to back-ups, is your data isolated from that of others, or
when servers are backed up is data commingled?
If so, what happens if another customer (or you) have to respond to an
emergency and need the backup for restoration?
In a legal matter, if your data is on a tape with that of others, how is
your data protected/isolated from potential exposure?

There are a lot of other issues that may be more important to your
organization, and some of these may be less important... but I think the
key factor is if ANYTHING is different, that it is researched and
documented and your practices are revised to reflect the changes.
