There's also a case called Public Citizen v. Carlin that's quite 
helpful.  And I think that both can be summarized this way:

You have discretion to decide what metadata is useful and necessary to 
keep in order to continue managment of the email, and pretty broad 
flexibility on where you  end up; but you can't just ignore it.  You 
should have some clear, consistent course of action.
