Thanks to everyone who responded to my query!

Bernard:
Documents do not have to remain alterable. I was considering the idea of converting the documents to PDF in order to use Acrobat's functionality. This might be the way to go, but we will have to do some more analysis and reflection on the process, in order to find the most suitable solution. Thank you for your suggestion.

If I find other solutions or receive more suggestions, I will post to the list.

You are asking for a tool that will modify files in a range of formats.
Ambitious. Might I suggest that you convert them all to a format like TIFF
or Acrobat, add the Bates stamp, and use the standardized file?  Besides, do
you want the numbered document to remain alterable?  You can keep the
"original" for reference.
