Susan Beamer mentions foods from the Eastern side of Washington...lentils, Cougar Gold. Also so many awesome wines we could start a separate thread.
Western Washington - I immediately think of salmon, Willipa Bay oysters, Almond Roca (Brown & Halley in Tacoma), Oberto beef jerky, and tons of fresh produce. Chefs and home cooks (like me) have a plethora of materials to work with. Love Tom Douglas. If you ever come to Seattle check out one of his establishments.
We are the apple capital of the US, huge producers of cherries, blueberries, cranberries, grapes. Easy place to be a vegetarian!
