well unless an organization doesn't use email and has no word processing, e-spreadsheets, e-powerpoints, databases and many other digital types of information and uses paper exclusively e-discovery wouldn't be used. that said in today's environment e-discovery is used in just about all forms of litigation, audits and investigations. a good place to start learning more about it would be to review the materials at the Electronic Discovery Reference Model website http://www.edrm.net/ basically e-discovery searches for digital information that is relevant to a legal case, audit or investigation.
