Steve, when migrating from Google (or any other system) to O365 for email, another consideration is what to do with the archived emails for former staff.  I believe most organizations would migrate the archived emails for current staff into the O365 environment, but not necessarily for staff no longer with the organization.  If you move the email archives for former staff to some type of backup storage, you probably should have a plan in place if you think you will need to access those emails (especially if you are in an industry that is heavily regulated and/or if you are prone to litigation events).
