We've done training on all the topics you've mentioned plus a couple of others, including records safety (i.e. lifting and moving boxes, not leaving file cabinet drawers open, not leaving boxes left in the aisle, etc.), and eCommunications (what/how to "say it," which is different than email management).  We're now working on two new training programs; email management, and eDiscovery.  We normally keep training sessions limited to an hour or so, and it seems that morning sessions tend to work better than afternoon training in our corporate culture.  Depending on the topic, we've also done "Lunch & Learn" sessions that have gone over well.

You may want to re-consider the number of training sessions offered at a time.  Our approach has been 2-3 different topics per year (repeated both in the field and at our corporate HQ) that were offered in conjunction with were we are in building our RM program.  To offer 6 or more topics right up front may be overwhelming in your organization. 

Finally, we've done separate training sessions for our Records Liaisons, vs. an enterprise-wide audience.  Are you looking at classroom style training or CBT (computer based training) sessions?
