Historically? The printing press. The man who invented it was named the
most important person of last millennium just because it led directly to so
many important historical events.

Recently? I'd say air conditioning. Not just from a comfort standpoint
(decades ago I'd look at 90 F degree weather and could do nothing about it,
as opposed to going on Craigslist and picking up a small cheap on for $40),
but it led to people moving to areas of the country and the world that they
would have steered clear of before.
