Hello Jon,

Are the ledgers currently in any kind of protective box of any sort? For long term storage, having them in acid-free, low-lignin boxes is always a good idea. They're not cheap though, so they may not be suited to your current venture. Library of Congress has some specifications about boxes here:

These may not be large enough for your ledgers though-- some of those old ones are huge!

If you're going to use plastic, I'd recommend stable polyester. Details on that here:
